Made from milk chocolate containing cocoa mass, cocoa butter and milk powders, the recipe contains 29.6% dry cocoa solids and 16.9% dry milk solids. The versatile curved shavings can be scattered over cakes, cupcakes and desserts or used more generously to decorate mousse cakes, confectionery and truffles.
